If you love eggplants, you will absolutely fall in love with this dish made with fried eggplant and fresh vegetables.
1 large eggplant sliced into 1/3 inch wide slices
1 large tomato
1 medium onion
1/3 of a bunch cilantro (or parsley)
1/2 tsp of garlic powder or 1 tsp of fresh garlic
1/2 tsp salt
Vegetable oil of your choice (to fry eggplant)
3-4 full spoons of sour-cream (For recipe CLICK HERE)
- Fry eggplant on your favorite vegetable oil.
- Chop tomatoes, onions and cilantro, add garlic and salt. For dressing I used my sour-cream, which is super easy to make.
- Put a slice of fried eggplant on a plate and cover with a layer of fresh vegetables in homemade sour-cream.
These eggplants taste as good the next day as the first day, cold or warm.
