Pasta Salad With Tahini Dressing (K)

This is full of nutrients, healthy option of a pasta salad. For this recipe you can use any of your favorite pastas, I recommend legume versions.


about 10 oz of uncooked pasta of your choice

2 Tbsp lemon juice

6 Tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1/4 tsp cumin

1/3 cup tahini

1 cup slightly roasted or sauteed red bell peppers (should still be firm)

4 tsp pine nuts (optional)

2 Tbsp minced parsley

- Cook pasta according to instructions of manufacturer, rinse with cold water.

- Separately mix in a bowl lemon juice, olive oil, salt, black pepper, cumin and tahini.

- Mix pasta with the dressing.

- Add bell peppers, pine nuts and parsley.
