I must say it is the best homemade substitute I got so far, out of all that I experimented with. If I figure a better recipe down the road I will sure share with you. For now it seems like a pretty good alternative, It is very easy to make too. It doesn't really taste like an egg. More like an egg pancake. It's also very filling and goes great for omelets or scrambled eggs, or anywhere else where you would use eggs.
Blend all the ingredients in a blender. Make a thin but not too thin layer of this batter on a non-stick frying pan and fry on both sides till golden.
1 pack of firm tofu (1 lbs) 1 cup of chickpea flour (Yellow mug bean could work better if you have it at home. If not, you can make the powder in a blender by blending dry mug beans.) 1 cup of unsweetened soy milk 1,5 tsp of black salt pinch of turmeric for color 1 Tbsp dry onion You may try adding some hot sauce or mayo inside after the egg is cooked and it's time to add the veggies. You can add lightly saute any vegetables you like in your omelet and add them to your egg patty. It makes enough for about 7 or 8 omelets. The unused batter can be refrigerated up to a week.
