Hands down one of my favorite salads filled with nutrients and surprising combination of ingredients which taste perfect together!
3 large avocados
1 medium red onion
1 large cucumber
1 cup homemade sauerkraut (click here for my recipe)
Salt to taste
1/2 tsp black pepper
cilantro, dill or parsley (optional)
Sour-cream (click here for my vegan recipe)
Chop all vegetables and mix together. For vegan version I recommend my recipe of sour-cream. You can use a regular sour-cream as well as vegenaise or mayo. If you are adding mayo or vegenese, do not add salt into this salad.
